Spinach
Salad with Poppy Seed Dressing
SERVES 8-10
- Dressing
- 1 1⁄2 teaspoons salt
- 3⁄4 cup white vinegar
- 1 1⁄2 cups oil
- 1⁄2 cup sugar
- ½ bell pepper
- 1 tablespoon poppy seed
- 1 teaspoon dry mustard
Put all ingredients in blender and mix until well
blended. Pour over sliced onion and
mushrooms. Refrigerate overnight. Very important!
Note for Dressing: This makes a lot, 1 batch will be enough
for 2 salads
- Salad
- 1⁄2 red onion, sliced thinly
- 1⁄ 2lb fresh mushrooms, sliced
- 1⁄2-1 lb grated swiss cheese, grated (I have also made this with fancy cheddar cheese and it is just as good.
- 1lb bacon, cooked and crumbled
- 1 bunch spinach (I use a 10oz bag)
- 1 head romaine or iceberg lettuce
Toss salad ingredients together and mix in dressing just
before serving.
